What do Category 1, 2 and 3 water mean?

They describe contamination under the IICRC S500 standard. Category 1 is clean water from a supply line, Category 2 is gray water such as washer discharge, and Category 3 is grossly contaminated, like sewage or rising floodwater. Clean water can worsen as it sits, which changes both the cleanup and the price.

Do I need mold work after every leak?

No. Fast drying limits mold, and the EPA says a moldy area under about 10 square feet can usually be cleaned by the homeowner. Larger areas call for professionals. Texas licenses mold assessors and mold remediators separately, and testing and removal are not sold as one package here.

Is creek or street water treated differently from a pipe leak?
